Pineapple Shrimp Fried Rice

I would have to say this was probably the favorite since it made a ton and there was not a piece of rice left over.

I got the recipe of skinnytaste but made it a little different.

2C uncooked brown rice
1 t oil
1lb shrimp
one bunch of green onions diced
2 jalapenos
3 cloves garlic
1/2 cup red pepper
1/2 cup green pepper
3 t soy sauce
1 pineapple


cook brown rice and set aside.
cut pineapple in half and scoop out pineapple, put to the side use the actual pineapple as a bowl to serve the rice in so your children will think it is awesome and eat large amounts of the dinner.

Heat up oil in a frying pan add shrimp.  Once shrimp is cooked set aside. Add green onion, garlic, jalapenos, and peppers to pan cook for 3 to 5 minutes.  Add cut up pineapple and some of the pineapple juice to the pan, cook for a couple of minutes longer.  Add rice and soy sauce and cook for about 5 minutes.  Stir in shrimp.  Put fried rice in the two pineapple bowls and serve.

  1. Megs, We still need your recipes for salsa, flat bread and cheesy potato things:) I am going to go buy a food processor in preparation for making this yummy things when our family returns back to real food;)
