Shannon's Sweet Chili
shannon's sweet chili
Prep: 10 minutes.
Cook: about 45 to 50 minutes.
Ingredients
- 2 pounds
ground beef (I use 1 pound beef and 1 pound chicken or turkey)
- 1 small onion,
chopped
- 2 cloves
garlic, minced
- 2 teaspoons
chili powder
- 2 teaspoons
salt
- 1 teaspoon
ground cumin
- 1 teaspoon
black pepper
- 1 teaspoon
dried oregano
- 1 can (28
ounces) whole tomatoes (I use crushed tomatoes)
- 1 can (28
ounces) tomato sauce
- 1 can (16
ounces) red kidney beans, drained and rinsed
(I use 2 cans of beans- sometimes 1
of them pinto)
- 1/2 cup
packed light-brown sugar
- 1 package

Shredded cheddar cheese, sour cream, optional
Directions
1. In a
large nonstick pot, brown beef, onion and garlic for about 10 minutes, stirring
occasionally.
(I put the meat mixture in the crockpot, add the other stuff and
simmer on low all day)
2. Add
chili powder, salt, cumin, pepper and oregano. Cook for 2 minutes until
fragrant. Drain liquid from tomatoes into pot; roughly chop tomatoes using
kitchen shears and add. Fill can with water and add to pot along with tomato
sauce, beans and brown sugar. Bring to a boil. Lower heat and simmer,
uncovered, for 30 to 35 minutes.
3. Let
stand for 10 minutes.
4. Serve
over cooked elbow macaroni. Garnish with cheese and sour cream if desired.
Makes 8 servings.
