Mexican Stew

2 pounds stew meat

1 28 oz can crushed tomatoes

Diced onions

1 teaspoon chili powder

1 envelope taco seasoning mix

1 15oz can black beans drained and rinsed

1 11oz can corn with red and green peppers drained

 

Mix beef, tomatoes, onions and chili powder in crockpot.  Cook of low 9-11 hrs.  WHISK in taco seasonings with wire whisk.  Stir in black beans and corn.  Cover and cook on high for 15-30 minutes.   

Garnish with sour cream  & serve with cheese quesadilla wedges
