Mari’s Potato Cheese Soup

Boil 1 lb frozen cubed hashbrowns, ½ tablespoon parsley, ½ cup chopped onion in chicken broth until hashbrowns are soft and then mash with potato masher.  (Can also put in crockpot on low all day and then mash hour before eating)

 

In small saucepan melt ½ cup butter, whisk in ½ cup flour and cook until bubbling.  Slowly add 2 cups half and half (can use fat free) slowing stirring until starts to thicken.  Stir into potato mixture and add grated sharp cheddar cheese or garnish with grated cheese and bacon or ham pieces.  Serve with breadsticks…
