Chicken and Dumplings
Grate
carrots, celery and onion
Cut 2 or
3 large chicken breasts into ½” pieces
Melt 2
Tbs butter in frying pan, add veges and minced garlic and cook for 2 min.
Add
chicken and sauté for 5 minutes.
Stir in
2 heaping tablespoons for flour, cook 2 minutes.
Pour in about
2/3rd cup cream, and chicken broth until enough liquid. Stir until
thickened. There should be enough liquid to allow the biscuits to soak up
liquid and still leave enough sauce for the chicken and veges.
Add
Salt, Pepper, Poultry Seasoning, Thyme and Rubbed Sage. Taste and add more if
needed.
Throw in
a handful or two of frozen peas.
Cut a
can of biscuits. (each biscuit into 1/8ths) and spread them out over the
chicken, vege, sauce mixture. Push biscuits down into the sauce.
Put the
lid on the frying pan and turn the heat down to medium low and cook for 15-20
minutes until biscuits are done.
Serve with apple slices.
