Chiliquillas
Remember the chiliquillas we ate back in the day? Best budget meal EVER!
10 corn tortillas
rotel
sausage or chicken if desired
Mexican
cheese or queso fresco
sour cream
green salsa or taco sauce
Cook torn
tortillas in a skillet over medium heat until crisp. Set aside.
Cook rotel
& sausage or chicken if desired. Add back in tortillas.
Whisk eggs together with salt
and pepper then scramble in the same skillet.
If using grated mexican cheese, sprinkle on top and put lid on pan to melt.
Garnish with sour cream and green salsa or taco sauce and queso fresco.
Serve with homemade refried beans
and Cantaloupe.
Homemade Refried Beans: 2 cans black or pinto beans, drain one and leave the other in sauce and dump into frying pan. Add some garlic powder and some salt and let simmer until well warmed. Smash most of the beans with a potato masher. Taste and add more sea salt as needed.
