Salsa Verde Chicken Chili

This is a great simple soup for cold nights with a great salsa verde taste.



Ingredients:

  • 4 cups chicken broth/stock
  • 3 lbs cooked shredded chicken
  • 2 (15oz) can white beans 
  • 1 (15oz) can black beans
  • 1 can corn
  • 2 cups of mild salsa verde 
  • 4 tsp. ground cumin
  • 1 can cream of chicken
  • Optional: avocado, cilantro, sour cream, tortilla chips 

Instructions:
  • Cook chicken and shred it 
  • Combine chicken broth, shredded chicken, beans, corn, salsa and cumin to saucepan. Place pan on stove and cook over medium high heat. Heat until boiling, cover and reduce heat to low. Let simmer for 5 minutes. 
  • Serve and enjoy!
