Tweaked Trader Joe's Favorites
Tonight for dinner we ate one of our favorite meals utilizing Trader Joe's sauces.
THAI RED CURRY CHICKEN
Cut up 3 boneless skinless chicken breasts and saute in frying pan until almost done. Add 1/2 jar Thai Red Curry Sauce, 1/2 can coconut milk and a tablespoon or two of red curry paste depending on how strong you want the curry taste. Let simmer for several minutes while the rice is cooking.Whisk a tablespoon of flour into a bit of coconut milk and stir it into the sauce to thicken. Add a squeeze of lime juice.
Coconut Rice: Dump the rest of the can of coconut milk into a measuring cup and add water to it to make 3 cups of liquid. Bring to a boil and add 1 1/2 cups Jasmine rice. Turn to low low low, cover and simmer for 22 minutes.
Serve the Curry Chicken with the Coconut Rice and garnish with chopped cashews and chopped fresh cilantro.

THAI PEANUT CHICKEN

Once again cut up 3 boneless skinless chicken breast and saute in a frying pan. Add 1/2 a jar of Trader Joe's Spicy Peanut Vinaigrette, 1/2 a can of coconut milk (reserve the rest to make coconut rice!), a couple of big shakes of Thai Chili Sauce - this will add some heat so do what works for you and 2 big tablespoons of peanut butter (creamy or chunky depending on what they like at your house) Simmer while rice cooks. (This one usually doesn't need to be thickened with flour)
Serve over Coconut Rice
Garnish with chopped fresh cilantro and chopped salted peanuts! This is really REAlly good served with THIS Asian chopped salad- on the side on on top of the dish.
