Crock Pot Picadillo

Sorry, Megs, I'm beating you to the post.  Megan mentioned that she was trying this last night, so I copied her.  Seriously delicious and  believe it or not, diet food.

Slow Cooker Picadillo

Servings 11, Size 1/2 cup, Calories 170

Ingredients:
1 1/2 lbs 96% lean ground beef
1 lb ground chicken or turkey
1 c onion
1 c red bell peppers
3 cloves garlic
1/4 c minced cilantro
1 small can Rotel
8 oz can tomato sauce
1/4 c capers or green olives (I did about half and half)
1 1/2 tsp ground cumin
1 tsp garlic powder
2 bay leaves
kosher salt and fresh pepper to taste

Directions:
Brown meat in large deep skillet on medium-high heat; season generously with salt and a little pepper.  Use a wooden spoon to break up the meat into small pieces.  Cook meat until browned, then drain all liquid from the pan.  Blend the onions, garlic and bell peppers if your children refuse to eat said vegetables and add to the meat.  Cook an additional few minutes.

Transfer the meat to the slow cooker, then add Rotel and tomato sauce.  Accidentally forget to buy cilantro and don't notice that the recipe calls for an additional 1 1/4 c water.  Add olives/capers and spices.

Set slow cooker to LOW for 4-5 hours if you only managed to plan that far in advance.  After it's ready, taste for more spices and add more as needed along with more garlic powder.  Discard the bay leaves and service over brown rice unless your husband is part Japanese--then you always, always use white rice no matter what.

This makes about 6 cups.

Service this with 3/4 c brown rice for an 8 point meal and a salad on the side.  Unless you add corn to your plate and top with sour cream.  Then, who knows or cares how many calories are in your dish because you are too busy trying to ignore your children's complaining about the green olives in the dish. (I don't even like green olives but loved them in this dish.)

Word of warning:  I probably would not blend the pepper/onion/garlic again as it took too much texture out of the dish.

  1. I heart skinnytaste (and Iowagirleats)!! We ate this for dinner last night- I don't pop whole green olives in my mouth but they added the perfect taste to this dinner! Ate it with Spinach, Strawberry, Feta, Almond salad...good stuff:)
